Kuzhambu Podi

Ingredients

  • Dhania-500gms
  • Red chillies-100 gms
  • Tuvaram paruppu- 200gms
  • Kadalai paruppu- 100gms
  • Fenugreek seeds-2tsps
  • Pepper-20gm
  • Turmeric-50gms
  • Ulutham paruppu-2 tsps
  • Dried curry leaves

Method

  • Dry the ingredients well in the sun and grind in mill to a fine powder.
  • If grinding in mixie grind, sieve and grind till done.
  • Store in air-tight container.

Sathumadhu Podi

Ingredients

  • Dhania-400gms
  • Pepper-100gms
  • Red chillies-20gms
  • Tuvaram Paruppu-150gms
  • Turmeric-20gms
  • Jeeragam-20gms
  • Dried curry leaves

Method

  • Dry roast and grind to a rava-like powder.
  • Do not grind to a fine powder.
  • It can also be sun-dried and ground in the mill.

Dosai/Idli Milagai Podi

Ingredients

  • White sesame seeds(yellu)-100gms
  • Red chillies-50gms or more if you need it hot
  • Kadalai paruppu-100gms
  • Ulutham paruppu-100gms
  • Asafoetida-a pinch
  • Salt-to taste
  • Cooking oil- 2 tbsps

Method

  • Take a fry pan and dry roast the sesame seeds till it splatters and a good aroma emanates.
  • Take 2 tsps of oil and roast the rest of the ingredients till the dals turn a golden red.
  • First grind the roasted sesame seeds and keep aside.
  • Grind the rest of the ingredients add salt and mix with ground sesame.
  • Store in air-tight containers.
