Omapodi:
Ingredients:
- Gram flour(Kadalai mavu) – 1-1/2 cups
- Rice flour – 1cup
- Salt – 1tsp
- Omam(ajwain) – 1tsp
- Asafoetida – 1tsp
- Chilli powder – 1/2 tsp.
- Oil for frying
- Ghee – 1tsp.
Method:
- Mix the gram flour rice flour, salt, chilli powder, asafoetida and ghee.
- Grind the omam with water and filter it.
- Add omam water and make a dough using enough water.
- The consistency should be such that one can press without too much effort.
- Ensure that it is not watery or too stiff.
- Heat oil in fry-pan.
- Using Omapodi acchu fill the Nazhi with the dough.
- Make omapodis in the hot oil.
- Drain on a colander or sieve.
- Once cold store in airtight containers.
- After one round of omapodi is over wash the acchu to facilitate making omapodis.
