Lady’s finger -500 grams
Tomato -2 cut lengthwise
For the stuffing
Turmeric powder – 1/4 tsp
Chilli powder -1 tsp
Coriander powder – 2 tsp
Pepper powder – 2 tsp
Amchur powder – 1 tsp
Salt as required
For the seasoning
Oil – 3 tbsp
Cumin seeds /Jeera – 1 tsp
Select ladies finger which are small in size and are tender. The smaller (size of your little finger) the better. Break the tip and see, if it breaks then it is tender.
Wash ladies finger and wipe it dry with a clean kitchen towel. This is an important step as the ladies finger will become sticky if you omit this step.
Cut off the tip and the crown. Make a long slit and keep it aside.
In a mixing bowl, add chilli powder, coriander powder, turmeric powder, Pepper powder, amchur powder and salt. Mix well and stuff the lady’s finger with this powder mixture.
Heat oil is a pan/kadai, add jeera seeds, wait until it splutters. Then add tomatoes and cook till tomatoes become mushy. Add little salt as we have already added salt to the stuffing.
Then add all the stuffed vendakkai. Keep the flame low and cook covered. Mix it now and then, so that the lady’s finger will get cooked evenly. Enjoy with rice or chapati.
