Carrot Kheer

Carrot very much known as healthy with more vitamin As etc. Here is a recipe of healthy tasty drink for this summer.

1. Carrot – 3
2. Milk – 2 cups
3. Sugar – ¾ cup or to taste
4. Ghee – 2 tsp
5. Cashew nuts – 2 tsp (broken into small pieces)
6. Badam – 2 tsp ( broken into small pieces)
7. Pista – 2 tsp ( broken into small pieces)
8. Cardamom powder – a pinch

Preparation time 10 mins
Cooking time 30 mins
No. of Servings 2

Kheer Preparation:

  1. Wash and peel the carrots.
  2. Cut into three or four pieces and cook till the carrots are tender and make a fine paste.
  3. Now take a heavy bottomed pan and add milk.
  4. Bring it to boil for 10 mins.
  5. Then add the carrot paste and cardamom powder. Stir well.
  6. Add sugar and keep stirring for 10 mins in low flame.
  7. Remove from heat.
  8. Finally garnish with pista, badam and cashew nuts.
  9. Refrigerate for 1 hour.

Kheer is ready.

Serve cold.

    It is being considered to declare refiner Sugar (available in the market nowadays and consumed by one and all) as a poison/toxin equivalent because of its effect on the human body.

    While it is wonderful to read and relish all the wonderful iyengar lovable recipies,
    Can we please ask the recipes to quote Non-refiner sugar (or) Jaggery to be substituted just like the good old days. Please advise me if I might be wrong.
