Omapodi:

Ingredients:

  • Gram flour(Kadalai mavu) - 1-1/2 cups
  • Rice flour - 1cup
  • Salt - 1tsp
  • Omam(ajwain) - 1tsp
  • Asafoetida - 1tsp
  • Chilli powder - 1/2 tsp.
  • Oil for frying
  • Ghee - 1tsp.

Method:

  • Mix the gram flour rice flour, salt, chilli powder, asafoetida and ghee.
  • Grind the omam with water and filter it.
  • Add omam water and make a dough using enough water.
  • The consistency should be such that one can press without too much effort.
  • Ensure that it is not watery or too stiff.
  • Heat oil in fry-pan.
  • Using Omapodi acchu fill the Nazhi with the dough.
  • Make omapodis in the hot oil.
  • Drain on a colander or sieve.
  • Once cold store in airtight containers.
  • After one round of omapodi is over wash the acchu to facilitate making omapodis.
