Nendrankai Varuval
Varuval is how we call chips in Tamil.
We can make varuval with potatoes, plantains, shenai kizhangu and with anything under the sun from bitter gourd to lady’s fingerbut nothing to beat the Kerala nendrankai varuval. Nendran is a banana variety. Here is the recipe:
Ingredients:

Nendrankai-6

Oil-for deep frying
-
salt-to taste
-
turmeric powder-1 tsp
-
chilli-powder-1 tsp(optional)
Method:

Remove the skin of the nendrankai with a peeler and put it in a bowl of water.

Heat oil (coconut oil is ideal).

Meanwhile using a chips slicer, slice chips over the oil or you can slice the required amount on a plate and transfer it into the oil.

When the sizzling sound stops sprinkle turmeric-salt soaked in water.

If you do not want the oil to turn yellow, fry the chips and drain extra oil in a sieve

When all the chips are fried add salt and chilli powder and mix well.
